Paella de verduras y gambon



Para 6 personas

Ingredientes:- 700 gr de arroz redondoBrillante Sabroz- 12 gambones- 200 gr de zanahorias pequeñas - 200 gr de guisantes- 200 gr de champiñones- 300 gr de habas - 250 gr de alcachofas - 4 tomates maduros- 3 dientes de ajo - azúcar - sal - aceite de oliva - pimentón de la vera - 1 brik de caldo de verduras o fumet de verduras - agua- colorante alimenticio

Elaboración:Lo primero que haremos será preparar las verduras, limpiarlas, cortarlas y darles un blanqueado:http://carew82000.blogspot.com.es/2013/11/truco-blanquear-verduras.htmlPonemos la paellera al fuego y sofreímos los ajos hasta que doren y añadimos el tomate previamente rayado con una cucharada de azúcar y una de sal y dejamos sofreír durante 5 minutos , pasado ese tiempo añadimos una cucharadita de pimentón y removemos bien . Vamos incorporando las verduras, zanahorias, champiñones, guisantes, las habas y las alcachofas y las dejamos pochar todas juntas durante unos 15 minutos para que se mezclen todos los jugos.
Con ayuda de una taza medimos los 700 gr de arroz y reservamos, para ahora poner el caldo o el fumet , os dejo un truco :http://carew82000.blogspot.com.es/2013/06/truco-el-fumet.html, siempre será el doble de caldo por cada taza de arroz y lo añadimos a la paellera, yo siempre añado una taza más de caldo ya que hasta que comienza a hervir pierde algo de cantidad.
