Sweet Potato (Satsumaimo)
This is a simple and delicious Japanese desert. Japanese sweet potatoes are called “satsumaimo”. They are very sweet and soft. Satsuaimo are used frequently in Japanese cuisine, prepared in a variety of ways and dishes: in cakes, chocolates, chips, grilled, and steamed.
Yield: 6 pieces
Time: 40 minutes
Ingredients
1 Sweet potato (satsumaimo)
2 Egg yolks (One for dough, one for glaze)
Spices
1/4 cup sugar
2 tbsp butter
2 tbsp milk
3 drops vanilla extract
Dash salt
Preparation
Peel the sweet potatoes, then slice into half-inch rounds
Soak the sweet potatoes in a bowl of water to remove harshness (about 10 minutes). Change the water a couple of times to freshen up during this process Strain the sweet potatoes and boil them for 10 minutes (or until soft) in a pot
Strain the hot water and put the sweet potatoes back in the pot, and mash
Add sugar, butter, salt, and milk, and simmer on low
Knead with a spatula until the mixture reduces
Turn off heat, let the dough cool down, then add 1 egg yolk, and vanilla extract
Mold the dough into oblong, egg-like shapes and place in foil cups (see picture)
Spread 1 egg yolk over the sweet potatoes
Bake 20-25min (until golden brown) at 400 degrees
